Tanni Saar

Prawns Soup With Greens

Serves 6 

Tanni saar is a simple saar or soup, that is light and wholesome. It is believed to cool the system.

Ingredients 

. tbsp oil

2 onions, finely sliced

4 or 5 green chillies, slit

5 or 6 garlic cloves, crushed

1 or 2 big tomatoes, finely chopped

1 bunch spinach or any other greens

200 gm prawns

. coconut, to extract 1 cup thick milk and 2 cups second and third coconut milk extract

Salt to taste

1 tsp turmeric powder

Juice of 1 lemon

Method 

In a pan, heat the oil and add the onions, green chillies and garlic, and fry till a light golden brown.

Add the tomatoes, fry, cover the pan and cook till the tomatoes are soft.

Add the spinach and prawns and shallow-fry for a couple of minutes.

Add the second and third coconut milk extract, salt and turmeric powder, and cover the pan.

Once the spinach is cooked, switch off the flame and add the thick coconut milk extract and lemon juice. Stir.

Serve hot with rice, fried lamb, fried fish or fried prawns.

Variations: The same tanni saar can be made with cabbage and chow chow. Prawns may be replaced by small crabs.
