Sweet Tomato Chutney
Serves 6
This sweet tomato chutney is unique to Pondicherry and Karaikal and is best had with lamb or chicken biryani. This chutney keeps well for a few days.
Ingredients
2 tbsp ghee
80 gm cashew nuts cut in small pieces
80 gm raisins
1 kg tomatoes, a little on the raw side, halved
. tsp salt
2 cups sugar
9 cardamoms, pounded
Method
In a pan, heat the ghee, add the cashew nuts and fry till light golden brown.
Add the raisins and fry till light golden brown. Set aside.
In another pan, add the tomatoes, salt and sugar. Cover the pan and cook on low heat till the tomatoes are cooked and a jam-like consistency is obtained.
Add the cashew nuts, raisins and pounded cardamom.
Serve cold.
