Shark Fricassé
Serves 6
This sura puttu is a well-known specialty in Pondicherry and Karaikal. Shark cooked this way is delicious, and is given to nursing mothers and patients as it is wholesome.
Ingredients
. coconut, grated
. kg shark, cut into big pieces
2 tsp turmeric powder
1 cup water
3 tbsp oil
6 big onions, finely sliced
6 or 9 green chillies, finely chopped
30 garlic cloves, finely chopped
1” ginger, finely sliced
Salt to taste
2 tbsp coriander leaves, finely chopped
1 tbsp aniseeds, crushed
Method
Roast the coconut until it is golden brown.
In a pan, add the shark, turmeric powder and water. Cover the pan and cook for 13 minutes. Discard the water, skin and bone. Break the shark into small pieces and set aside.
In a pan, heat the oil and add the onions, green chillies, garlic, ginger and salt. Fry till the onions are golden brown.
Add in the shark and fry on low heat until all the liquid is absorbed.
Add the coriander leaves, roasted coconut and aniseeds. Stir fry for a couple of seconds and then switch off the flame.
Serve hot with rice and sambar.
