Neiy Muruku

Ghee Muruku

Makes about 35 murukus 

This sweet muruku is unique to Pondicherry. It is crispy and slightly sugar-coated. The Christian community of Pondicherry and Karaikal make this muruku for Christmas.

Ingredients 

6 cups raw rice

3 cups green gram

1 coconut, to extract 2 cups thick coconut milk

1. tsp salt

150 gm butter

2 cups sugar, pounded

1. tbsp sugar pounded for the paste

To fry the muruku

2 cups oil

Method 

In a big frying pan, dry roast the rice. Set aside.

In the same pan, dry roast the green gram and then grind it into a fine powder together with the rice.

Mix the rice-green gram powder with the coconut milk, salt, 1. tbsp of sugar pounded and butter to make a fine paste.

Make muruku out of this mixture with the help of a muruku mould.

In a deep frying pan, heat the oil and fry the muruku till golden brown. Remove and sprinkle lavishly the muruku with sugar powder when they are hot.

Cool and store in an airtight container. These muruku keep for one month.
